Raisin Oatmeal Cookies
I baked raisin oatmeal cookies recently. After I got my great ice cream scoop, I bake some more cookies.
I used the smaller sized ice cream scoop this time and the cookies were all the same size.
How easy it is to bake cookies with this scoop! Of course, I enjoy eating the cookies as much as I enjoy baking them.

Chocolate Chip Cookies
I froze some cookie dough when I baked these cookies last time. The dough had already been rolled into balls. I defrosted and baked them today. It was helpful that I had rolled the balls before I had frozen them.

PC Decadent Chocolate Chip Cookies
I tried some of Andrew's favorite food when we went to Canada last time. One of his favorite cookies is the PC Decadent Chocolate Chip Cookies. I wanted to bake the cookies for him for Valentines' Day. I couldn't find a recipe so I tried a basic chocolate chip cookies recipe. I added twice the amount of chocolate chips than the original recipe because the PC Decadent Chocolate Chip Cookie's first ingredient is chocolate chips.
The cookies were very sweet because there are tons of chocolate chips inside the cookies! The cookies were good with a glass of milk.

Healthy sweets
My motto is dessert should be sweet and rich. I usually try not to reduce the fat or sugar from my baking. In the recipe book below, all of the recipes are non-dairy and they only use a little sugar. I heard the book is popular now. I was interested in it, that's why I baked some cookies that can be seen on its cover. The ingredients are wheat flour, salt, a little canola oil and maple syrup. They looked pretty but the taste was not for me. I think I will go back to my motto.

Fig and Apple Bars
いちじくのクッキーを作りました。今回は前回よりも小さく、それからりんごとレモンを煮て別の味も作りました。
先に作って冷やしておいたクッキー生地が扱いにくく、中身を包む時には具がはみ出したり、破れたりしながらも、何とか三等分にし天板にのせました。
いびつな形が少し膨らんで焼き上がりました。
りんご味もおいしく、他に苺も合いそうな気がするので、いちじくの無い季節でもこのお菓子を作ることができそうです。

Fig Bars
刻んだいちじく、オレンジの皮の砂糖煮、レモンの果汁と皮、砂糖、小麦粉、ラム酒、水を火にかけ、混ぜながら煮ます。
ねっとりとするまで煮たら冷まして、刻んだくるみを混ぜます。
冷蔵庫で冷やしておいた、シナモン、ナツメグ、クローブ、オールスパイス入りのクッキー生地をのばし、手前半分にいちじくをのせます。
向こう側の生地を手前にもってきていちじくを包み、中火のオーブンで焼きます。
焼き上がる頃には部屋の中が香辛料の良い香りでいっぱいです。味見は少し我慢して、冷めたところを切り分けたらできあがりです。これは主人が気に入っているお菓子のうちの一つです。

Mushroom Cookies
キャンプにいく途中にある道の駅で売られている椎茸クッキーは、さっくりした素朴な食感と椎茸のしみじみとした味がおいしくて、毎回お店に寄るのを楽しみにしています。今日はそのお店で購入した椎茸の粉末を使い自分で作りました。
記憶しているお店のクッキーの味と食感をたよりに、バター、砂糖、卵を混ぜてから小麦粉と椎茸の粉末を入れました。椎茸の粉末は小麦粉の重さに対して1割入れただけですが乾燥椎茸の粉はかさが多く、混ぜながら椎茸の強い香りに、入れすぎてしまったのかと心配になりました。
棒状にまとめて冷凍庫で冷やし、焼く直前に切り分けました。最後に甘みが足りないかと思い、まわりにはグラニュー糖をまぶしました。いつもクッキー作りは匙で天板に落としたり型で抜いたり、生地の扱いに苦労しますが、この方法だと楽にでき驚きました。
お店のものには及びませんが、色や食感が似たクッキーができました。きび砂糖と椎茸の粉末で少し茶色の生地に、うっすらと焼き色がついて、かすかに椎茸の香りがします。
