Crêpes

I like making crêpes. I pour a little batter on the pan and then rotate the batter in the pan to make it even. I wait a few seconds, then flip it and move it onto a plate and repeat... I made 20 crêpes for lunch today. I made a cheddar cheese crêpe sandwich on a hot pan by heating some cheddar cheese in between two crêpes. The cheese melted and was delicious. I tried it with chocolate too. I also ate some crêpes with lemon juice and sugar. There were so many crêpes though that we couldn't finish all of them.

Pumpkin Bread

I baked pumpkin bread today. I used cinnamon, nutmeg, ginger and allspice. The bread was spicy...just as I like it.

Banana Bread

I tried a new banana bread recipe today. The difference from my usual banana bread recipe is using meringue and oats. The texture from the oats was interesting and filled me up.

Banana Bread

I baked banana bread for a friend who I haven't seen for awhile. I forgot if she likes nuts or not, so I didn't add any. Luckily she liked the bread. I gave the rest of the bread to her.

Amanatsu & Amanatsu Cake

I saw my neighbor when I was walking this morning. He gave me a big orange called "amanatsu" from his back yard. The orange size was the same as both of my fists.
I baked a cake using it. I used the juice from half of the orange in the cake batter. While the cake was baking in the oven, I made syrup from the other half of the orange. I soaked the cake in the syrup after I baked it. The orange's sourness was good for the cake.

Picking Raspberries

I went wild berry picking again. I only got a little this morning. I guess the season has almost finished. I also noticed that there are different types of raspberries and that each has a different size.

Two Lemon Marmalade Cakes

My lemon marmalade is slightly bitter. I like the marmalade on toast with milk tea for breakfast. Today, I use the marmalade for a cake. I cut it and mixed it into a simple cake. The cake was OK but not wonderful.
I was curious if I could make it a different way. I decided to bake one more cake. I used my food processor to mince my marmalade into a paste. I also added more marmalade into this cake than the previous cake. My second cake was worse than the previous cake. It was too moist and bitter. I regretted following my curiosity but I still ate it.

I baked a cheese cake again. My small spring form cake tin is perfect for making this cake. I usually like cherries or blueberries on top of cheesecake. This time I decided to add blueberries.

Calamel Cheesecake

I baked a cheesecake without lemon. Instead, I made caramel cream and spread on the cake. The caramel cream wasn't burned this time. It had a good bittersweet taste.

Happy belated Birthday!

Andrew's birthday was January 4th. We couldn't celebrate his birthday because we were on a plane returning from Canada. I decided to surprise him 10 days later after his birthday. I baked a cake one day before and hid it with a present in our house. I put candles on the small cake and sang Happy Birthday to him.
I know he likes lemon cake. I chose to make a lemon blueberry cheesecake. First of all, I pressed cookies crumbs into the bottom of my tin and baked it.
I prepared lemon peel and juice using a new grater I bought in Canada. This tool is a star in my kitchen. I can grate much more lemon peel with the grater than my old one.
I mixed cream cheese, an egg, sugar, lemon juice and lemon peel together.
And I poured blueberries over the cream cheese mixture.
After I baked it, I hid the cheesecake in a secret place.
I liked the cake because it had a good lemon taste. The birthday boy liked it too. He liked the bottom crust a lot.

Persimmon Cake

熟れて柔らかくなった柿を、つぶしてケーキの生地に混ぜました。
片手からはみ出すくらい大きな柿を入れたので、焼く前の生地はうっすらと橙色に染まりました。
柿の他に、シナモン、ナツメグ、クローブを混ぜ、焼き上がりは部屋の中が良い香りでいっぱいです。
泡立てたクリームを添えて頂くと、柿の甘みで、とても甘いケーキになっていました。以前学んだように、柿の味はほとんど感じられませんが、熟した柿を混ぜることによって生地がしっとりとなりました。

Mont Blanc

大好きなモンブランを初めて作りました。初めてのお菓子に挑戦する時には、材料を準備しながら、いつも期待感に胸がいっぱいになります。
まずは底の部分を作りました。ケーキとビスケットの中間くらいの固さに生地を焼き、それを丸く抜いて、ラム酒に砂糖を溶かしたものを塗りました。
栗にバターと泡立てたクリームを混ぜ、底の生地の上に山高く絞り、モンブランは完成しました。
実は、初めてのモンブランは失敗に終わりました。栗のクリームは柔らかすぎて絞るのに苦労し、底の生地は苦いため食べられず、鴨の餌になりました。

Raspberry Brownies

前に友人が、おいしい木いちご入りのチョコレートケーキを作ってくれたのを思い出して焼きました。沢山のいちごを入れたため火の通りが悪く、もう一度オーブンに戻して焼きました。甘いチョコレートに木いちごの酸味は、おいしい組み合わせです。

Yogurt Soufflé Cheesecake

ヨーグルト、卵、クリーム、レモン、砂糖、コーンスターチを混ぜたら、お湯を張った天板にのせ、オーブンで焼きました。
焼きたては、かなり膨らんでいました。
冷えるとみるみるしぼみ、さらに冷蔵庫で冷やすと、焼く前の生地と同じくらいの高さになりました。
ほのかにレモンの香りがします。水分が多いのでしっとりとしていますが軽い食感です。

Sweet Potato Bread

さつまいもを蒸してつぶし、くるみとシナモンとナツメグも生地に混ぜて焼きました。
秋になると、さつまいもを使ったお菓子を作りたくなります。甘いさつまいもは、そのまま蒸すだけでもおいしいので、甘さを確認するつもりの味見が、ついつい止まらなくなってしまいます。

Chocolate Brownies

頂き物の、チョコレートケーキの素を使ってみました。
箱の中身を混ぜて焼くだけなので、簡単すぎて物足りないのですが、とても忙しい時や疲れている時には役に立つかもしれません。
調べてみると、このケーキの素に他の材料を混ぜて、ひと手間加える人も多いようです。

Carrot Cake with Cream Cheese Frosting

にんじんのケーキを焼きました。いろいろな違った作り方を試すのは楽しいのですが、今回はお客様用なので、冒険はやめて、私の定番の作り方にしました。冷ましてから、クリームチーズにバターと粉砂糖を混ぜて塗ります。
今回は側面を塗らず、ナイフで横縞の模様をつけてみました。この後、お客様が好きなだけケーキをつまめるように、小さめに切り分けました。

Sweet Potato Cakes

さつまいもを蒸して、バター、きび砂糖と少しの牛乳、卵黄、ラム酒を混ぜてから、高温のオーブンで焦げ目が付くまで焼きました。半分はシナモンとナツメグを入れましたが、香辛料を入れないほうが、さつまいもとバター、ラム酒の風味が生きていました。

Lemon Cake Roll

レモン味のロールケーキは、果汁を混ぜたスポンジ生地で、おろした皮入りのクリームを巻きます。ところが、今朝は起きてすぐに作ったせいか、生地に果汁を入れ忘れてしまいました。そこで焼き上がった生地に刷毛で果汁をしみ込ませたところ、何とかいつものケーキに近い味になりました。
