Fruit Jellies
About once or twice a year I want eat these small square fruit jellies. When you eat these jellies, you will notice that it's not gummy because the main ingredient is agar not gelatin. I guess it is not super popular but you can always find it in stores.
Today, I tried to make this type of jelly at home. I cooked lots of agar powder, mango puree and sugar. After it cooled down, I cut it with a cookie cutter. Even though the mango jelly was a little harder than my regular jelly, It still didn't taste like the jelly I wanted.
I tried to make it once again. I cooked lemon juice, lemon peel, sugar and much more agar powder than last time. It took a long time to dissolve all of the agar powder in a small amount of water. The texture was closer to the jelly but still not quite there. Andrew liked it though and ate them all.
I learned that this jelly is difficult to make at home. I am happy to continue trying to make the jelly until I am fully satisfied.

Sweet Potato Snacks
I made two sweet potato snacks last week. This picture below is called "imo kenpi". I cut some sweet potatoes into long, thin strips, fried them with oil and cooked them with brown sugar and ginger. The potato snack was supposed to be crunchy but mine was not.
Another day, I made "daigaku imo". This is similar to the previous snack. I cut some sweet potatoes into bite-sized pieces, fried them with oil and mixed them in syrup from sugar and water. I sprinkled some sesame seeds on top. I don't feel so guilty when I make snacks from some vegetables even though I use oil and sugar.

Gohei Mochi
I made a rice snack called "gohei mochi" today. I mashed cooked rice in an earthenware mortar until it had stuck together.
I put the rice around wooden sticks.
I baked the rice and then brushed them with sweetened miso sauce (miso, walnuts, sake and sugar). I wanted to bake them one more time after I brushed the sauce on them but the sticks were unstable so I just ate them. I like these simple snacks.

Amazake
Recently I received some sake lees, which is what is left after the sake has been pressed out of the mash. It is called "sake kasu" in Japanese. Sake kasu is used in cooking in many ways.
I tried using it in an easy recipe today. I cooked sake kasu with water and sugar. After, I dropped grated ginger on the top. This sweet drink is called "amazake" in Japanese. At new year's time warm amazake is served when you visit temples and shrines and it warms you up.

Miso Manjyu
私の住んでいる地域の名物、味噌まんじゅうを作りました。まず皮は三温糖、黒砂糖、赤味噌を混ぜ、水、重曹、小麦粉を加えてまとめます。
皮は柔らかいので、打ち粉をしながら、先日の蒸し羊羹の残りの餡を包みました。
蒸気のたった蒸し器に入れます。
割れてしまったものもありますが、艶やかに蒸し上がりました。
調べたところ、元々は黒糖の色が味噌の色の様で「味噌まんじゅう」と呼ばれており、味噌は入っていなかったそうです。湯気の出ている餡まで熱いまんじゅうも、冷ましてからのまんじゅうも、両方とも柔らかく美味しかったです。

Dorayaki Gift
贈り物用にどら焼きを作りました。今度は前回より小さく、直径 7 cmに焼きました。
前回と比べて思ったのは、生地を小さくした方が、餡を挟む時に中央に厚みがでるので、餡がたっぷりに見え、おいしそうにみえます。
どら焼きを一枚ずつ同じ大きさに焼いていく作業は気が抜けませんが、贈る方の事を考えながら集中して焼くのは楽しいものです。
